If you bought the glass, thermal or wood gourd set, you can skip this step. Curing the mate gourd – If you have a mate with a wooden or glass interior, please go to the next step. Curing the mate just means that you seal the inside of the gourd. There are many ways to do this. The easiest is to fill the gourd with yerba mate or ground coffee, fill with water and let sit for 24 hours. Empty grounds, rinse and you are ready to go! Heating and sweetening water – Use filtered water. Heat until water steams, but does not boil. Any water that is too hot will “wash” the tea leaves and make for a very weak tea after a few servings. Pour water into a pitcher or thermos that allows for a “narrow stream” to pour out. If you have decided to sweeten the water, add stevia, honey or another product to the thermos. First time EVER drinking mate – Fill the gourd with 2 tbsp. of tea. Dampen the tea with room temperature water. Give the leaves a few seconds to swell a bit and then add the bombilla (metal diffusor straw) in the mate. Add a few drops of stevia or another sweetener (if it has not already been added to the water in a thermos), and then hot - but not boiling, water. Fill to “just below” the ridge. Drink this first cup pretty quickly because it is strong. As the water sits in the tea, it gets stronger and can turn bitter if left too long. Every cup thereafter is made with the same tea leaves. Just keep adding water and sometimes, stevia, and then sip through a straw. Do this until the tea doesn’t have much taste. Then, just empty and refill with fresh leaves. The first few times using the painted gourds in your Gourd Yerba Mate Set, the stain on the gourd, will bleed. This is a hand-painted cup and the paint needs to “set” with use. Please put a paper towel or napkin under the gourd to avoid anything getting stained. Filling the mate You will want to start slowly. Yerba is quite strong. Put all of the elements of your yerba mate set out in front of you. Fill the mate with yerba about 2 tbsp. of tea. Put your palm over the opening and shake so that the leaves mix with powder. Turn the mate right-side up. (After you have had mate a few times, you may want to increase the amount of yerba in the mate. Try about 1/3 of the gourd full. Most will settle at around 2/3 full) Adding water to the yerba mate in your yerba mate set Add a little room temperature water, to one side of the mate cup. Once that is done, push the bombilla through. The bottom of the bombilla should touch, or come close to the bottom, of the mate cup. Add the hot water to the top of the mate until it reaches just under the lip. Sip the water through the straw, and enjoy. If it needs a bit of sweetener, add more. Refill and slip until the water has washed away the flavor. You can then empty the yerba and refill as many times as you want. To Clean With a small spoon or your finger, scoop out all the tea. Rinse well and set to dry. Now your yerba mate set is ready for the next time you want to use it.
